Fattoush Salad: A Fresh Take on Tradition

Long before “zero-waste cooking” became a trend, farmers in Lebanon were already living it. Faced with stale pita bread and an abundance of fresh garden vegetables, they created what we now know as Fattoush—a crisp, tangy salad that celebrates both resourcefulness and bold flavor. The magic lies in contrast: crunchy golden pita chips, juicy vegetables, and a zesty dressing that ties everything together.



This is not your average salad. It’s bright, herbaceous, slightly tangy, and packed with texture in every bite. Perfect as a side dish or a light meal, Fattoush brings a taste of the Mediterranean straight to your table.


Ingredients

  • 2 pita breads

  • 1 head romaine lettuce

  • 3 tomatoes

  • 4 cucumbers

  • 3 green onions

  • 1 bunch fresh parsley

  • 1/2 bunch fresh mint

  • 2 tbsp pomegranate molasses

  • 1/3 cup olive oil

  • 1 tbsp sumac

  • 1 tbsp garlic powder

  • Salt & pepper


Instructions

  1. Cut the pita bread into bite-sized pieces and fry until golden and crispy. Set aside.

  2. Chop all your vegetables and herbs into small, fresh chunks.

  3. In a separate bowl, whisk together olive oil, pomegranate molasses, sumac, garlic powder, salt, and pepper to create the vinaigrette.

  4. Toss the vegetables with the dressing just before serving, then top with the crispy pita chips.
